Zahtar, of middle eastern origin, is a very popular spice mix consisting of ground thyme, sumac and roasted sesame seed. It is popular in North African cuisine and principally in Turkey and Jordan.

It can be sprinkled as a condiment on vegetables, kebabs or meatballs but can also be mixed as a paste with olive oil and spread over unbaked breads to form a spicy crust when baked.
